It is "Good" for sure ... but I am sorry to say I have had better...hard to explain but the taste is not like authentic, deep country taste (deep savory funk, and complex hickory slow aging smoke taste)...it does have intense saltiness which is expected. Guess as a older past country man, I was spoiled in the past with that older heritage brand of ham. Still "Good" ham sent !
Your product has excellent flavor! Cons: very salty,very tough-especially the sliced ham. Pros: really good flavor! The ham is reminiscent of 18th century salt pork(not the crap one finds in the modern grocery store). We are a small family, so we won't be reordering for awhile but we will be reordering. I laid a couple of the ham slices on a sheet pan and cooked them in the oven at 400° for 30 minutes. The method crisped the fat and cooked the slices well. Then I removed the bone and minced the slices in a food processor. Then added bone and mince to a crock pot of half done beans. Also added minced roasted onion, garlic, and carrots. Also added tomato paste, canned tomatos, chili powder, chili flakes, oregano, black pepper and 2 cans of diced green chilis. Basically a kind of Charro beans. No salt. Cooked another 4 hours. THE BEST BEANS-EVER!!!!!! We eat beans nearly every day. Can't wait to try your ham with other varieties of beans and split peas, lentils, etc!!! So good! The peppered back slices: baked 400° til crisp. Then crumbled like bacon bits. Great on Salads and added to egg salad, potato salad, etc. Mega good!! I love your product and am one happy customer. Your product is NOT grocery store ham. It is way better!!! Thank you!! Would be 5 star but the ham slices are really tough. They work well minced or chopped. So not a big con. The pros outweigh the one con.

Good ham. It came from a really fat pig. Next time I’d like it in multiple sealed sections instead of one so I don’t have to divide it and reseal it into smaller portions.
